New guy from eastern Washington

My wife and I have been distilling for a year now and love it. Currently we have just a nice little 3 gallon pot still but I've just ordered a new 7 gallon copper still can't wait for it to be delivered! We mostly distill fruits. We've had good luck with tequila and we're currently fermenting tomatoes. We like to explore new out of the box stuff to ferment and distill.

I do have a question about aging tequila. I'd like to try aging with a toasted peach pit. Anyone heard of this or could it be a bad idea being a fruit pit?

Well, let me be the first to welcome you! Nice to have ya.

I believe we are in dire need of a good tequila recipe. I've only had one from a home distiller, and it was from blue agave syrup, but we agreed there might have been a tricky cuts to it that he missed.

Anyways, don't want to get to far into here, as this is just a meet and great thread, but I do hope you'll pop over to the recipe development section and post some of your creations. Sounds like you're creative nature is right up or alley. Thanks for stopping by, stay awhile!

Me too. I would love to know more about the tomatoes....

I had an idea they did not make much alcohol but that could be quite wrong.

Do you add sugar???

It is just possible I could get tomatoes, one of the country's biggest growers (in acres and acres of glasshouses) is near here....
