OK... a whole lotta firsts with this damn all grain stuff. It better taste damn good!

Have a look at this folks and see what you think.

I'm torn between Lactobacillus and Pediococcus... favoring Lacto since I really don't see the heavy "spider web" of Pediococcus.... plus I would rather have Lacto.

About the mash: AG mash (my first... :evil: ): started just over 1 week ago
22 lb of cracked corn, 6 lb of 2 row malt, 3 lb rye malt (I think this is where the infection is coming from)
gypsum and 15 ml of citric acid
12 gallons H2O
OG: 1.056


Today.. the pics as you see them
FG: 1.000 (FG as in the SG today...still has a little activity but I don't know whats what)
pH between 3 and 4
smell - no puke or diaper or diaper related puke
taste - no real "bad" taste to it. Some sour as expected.

Questions for everybody:
1. Lacto?
2. Run it?
3. Save some?
4. Sanitize?
5. Can it wait until the weekend to run?
6. Skim it off the top or siphon it off from below?

My answers for above would be 1. Yes, 2. Yes, 3.Maybe... , 4. Depends on the taste after the run, 5. and 6. I am somewhat unsure so looking for advice!

This was to be my inaugural run on my flute as well... :( . Never really has an infection before (unless you count dunder... then sort of....in one bucket only...on purpose.)

Yeah, I've had lactos before, they might have affected my whiskey in some way, but near as I cal tell, not a bad way.
Don't sweat it, good luck with the run.
