Using 2 row malt
I come from a wine and beer background and will be doing distilling. I want to incorporate cooking the sugars out. Making 5 gallon run and I have 5lbs of mixed sweet grain. How much 2 row do I need? Thanks.

Really? I was thinking of doing 10lbs of grain and 2lbs malt.

General guide is 20%-25% of total grain bill should be barley malt.
If you're mashing 12# that puts you at 2-1/2 or 3 pounds malt, the rest raw grains.
2# grain per gallon, maybe a bit more if corn is involved, should get you close to an OG of around 1.065, another general guideline for a whiskey mash.
