I am looking to put my first wheat vodka mash together very soon. Can anyone advice on which yeast is best for use.

Baker's yeast will be fine for a wheat mash. Just pay attention to the ferment temperatures, and it should be fine. I recommend a starting gravity (OG) not greater than 1.075 for the best results. Ferment a batch size large enough for 3 boiler strips and then run the low wines through your reflux column to claim your neutral prize.

Bakers yeast likes a WARM environment, up to around 90°F if you have an aquarium or belt heater.
