How long should the gerber wash take to finish?

80+ hrs...still a blip every 4-5 seconds, and still looks like lemonade.

LOL...I've got the water runs down pat!

Should have been done 42.7853 hours ago.
Get a clean spoon and scoop up a sip. Is it dry?

It's just off gasing Co2.

I'd rack it into the fridge for a day or two. But I got a second fridge.

BTW, your likker will run much nicer than water. Its gonna heat up much quicker so make sure your cooling system is good to go when the vapor starts getting the base of your column good and hot.

I thought it was suppose to clear up when done?

Does it clear AFTER I rack over to another container and put in the fridge?

Suspended solids will settle, but not all of em.

When you rack to new vessels the wash will clear (clean up) further.

If you can spare the room, a day or two in the fridge will really help clean the wash up nicely.

I have a batch in the fridge now that has been racked twice and is very clean looking but not clear. Also, the added "Rack" time has really improved the,,,,,aroma.

I have about 24oz (or so) of rum wash left over from my last rum batch. Been in the fridge for better than a month now. It smells absolutely wonderful. I'm gonna charge my thumper with it when I finish the build.

Some Gents like the character of a freshly completed ferment into the still. I am sure that I favor letting the wash get good and,,,,,,,,,clean. (I'm pot stilling).

When/if you get time, try it every which way you can to further conclude what "you" prefer.

Get your baseline reference then see what you and your taste buds like (IMO).

An 80+ hour Gerber ferment isn't altogether uncommon but most of mine finish sooner... If it went for a week I might be concerned...

Man...I think I could drink it just like it is.

Fairly dry...not sour at all. Ain't no wine drinker, but didn't turn my mouth inside out either. Actually smelled decent, maybe that's a bad thing. But the gunk on the bottom was pretty potent!

Wife didn't even get upset when I opened it up...(and she's a smell freak)

It's been on the kitchen counter, per the sticky thermometer I affixed to the side of the container, hasn't been over 80*.

Mine is the same way. Must be a Florida thing I can't cook any wild hog in the house but she says my ferments thus far smell good. Wait till I do some UJSM. :shock:

WELL.....it is VERY drinkable cut 50/50.

(24) 100 ml cuts were made on a 3 1/2 gallon wash....#9 and #15 are history.

It would be inadvisable to further try and report the specifics at this time :P
