4L/ 6 kg feedstore mollases
500gms white sugar boiled with 3 L orange juice (to add body for the yeast to work on, and acidity to invert the sugar)
Threw in 3 vit c tablets, 1 multi vit, and a vit b. 2 Tsb DAP and 15L water.
Topped with a sachet of coopers Ale yeast - should i add some wine yeast later? I have some Vintner's Harvest SN9 Yeast on the way that can easily hit 16-18%?
I'll run it in my reflux still - i find i get a lot of wash flavor come through even with the ceramic packing, but i assume i would get more if i remove it?
Depending on the result i will Bi-carb it and re run, then try aging each 1/3 of the run on toasted manuka, toasted pecan and toasted alder before playing with caramel, rasins, vanilla and such.
sound about right?

A WAG on my part.
Take the 4L of molasses, use only one liter of it and continue on as planed
with some brown or white sugar. Save the yeast you have now for a fruit
based wash and use bakers yeast instead. But, most of us are free to do as we damn well please.
Just have a feeling your not going to like what you are thinking of mixing up, if it works at all.

Hi there, It is going like stink and smells ok - mollassesy i guess.
Do you think the molasses flavour will be too pronounced then? Im going to reuse the dunder a couple of times with some brown sugar and then with some white, i think i will redistil each batch, i could blend the resulting spirits to mellow the first if it will be too strong.
I take it that treating with bicarb would destroy the good flavors i am after then.

Your not using enough water. Got to delute that molasses down.
You have enough molasses for four batches. Better if you can to
go to 20L per one litre of molasses.

This finished in 7 days and sat another 4.
I poured it off into my still and tried to run it. It puked so i turned it off overnight and asked advice. Today i reduced the charge, It puked.
I reduced the charge again and played with the flow rate in my column and got minor puking and 1.5L of 74% from around 14 L of wash after discarding 200ml fore-shots.
I practiced my cuts on this run and got two jars (out of 12) that i think would be OK to drink diluted as is.
I diluted this down to 40% and returned it to the still with 6L of the original wash.
Again 200 ml cuts but i only threw away 100ml as fore-shots. Ran my condenser harder and had an average temperature of 76 Celsius till about jar 8 when it started to creep up sloowly shut down jar 11 on a temp of 90 Celsius
I now have 10 200 ml jars of perfectly clear RUM - 11 in total (No1 took a mini puke hit)! airing in my study - i will test them tomorrow after work, dilute and mix them,then leave 1/2 to air/age white, and try aging the other half on toasted/light char manauka.
Interestingly enough I tried Captain Morgan Black Label the other night, could smell the heads in it, took two sips and chucked the rest!
Just a note: in both the first successful run and the 2nd, the 2nd jar after the fore-shot came over smelling utterly beautiful - caramel cream/butterscotchy - didn't have much burn either. Weird huh? We'll see what it's like diluted tomorrow.

DAMN - this stuff is BEAUTIFUL!
IT has only been on the charred manuka 4 days (with a paper towel cap to allow it to breath) and it is so tasty and mellow, hint of buttery caramel flavour - so nice I'll leave it a bit longer as i want some more colour in it and then i'll put it to sleep in glass bottles with screwcaps. Is it worth me buying corks for the bottles so it can keep breathing a bit?

Good gods this stuff is amazing! 2 weeks on charred Manuka sticks and airing now - I swear I may become a RUM maker, not a flavoured sugar spirit maker yet - the ONLY thing i'm even considering for this is a hint of caramell. It is 55% abv and the most lusicious pure spirit i have ever tasted. I would drink this as happily as topshelf absinthe or Damson gin.
