Just ran my 4th generation of UJSSM yesterday. I have upped the corn, sugar and water by about 15-20% each so I end up being able to get 10 to 12 gallons into the boiler.
Using a 4" 6 plate flute. I collect and discard 12 to 16 ounces as fores.
got 14 pints, 93% down to 70%. still letting it air until tonight.
The last (3rd gen) I got 12 pints from 92% down to 70%.
I used a 1/4 tsp of spring water and 1/4 tsp of UJ into a glass shot glass to do smell and taste testing.
1st pint (after fores) was kind of hot and burning.
2nd was very similar to the commercial "moonshine" i have had.
3rd was better, less burning, and better flavor, initially thought maybe start of hearts, then tested next pint
4th was very pleasant, thinking this was start of hearts
5th through 8th were amazing.
9th similar to 3rd
10th similar to 2nd
11th similar to 1st
and the 12th pint was kind of hot and burning, similar to 1st pint.
I am hoping that gen4 is as good or better than gen3.

Sounds nice. I don't get 'hot' in the late jars, but there's a stale funkiness that gets really sharp in the tails.
