Smoked peated whiskey with funny rainbow film on riser

Whiskey has been on my bucket list for a while.

So here goes...
All grain recipe of 25lbs of 2row and 11lbs of peated smoked malt.
Trying to find some peat and smoke it myself next time.

Fermented with WLP045 scotch whisky yeast.
Anyone use this yeast? It had a strong apple cider kind of taste.
Not what I was expecting. Perhaps infected.

OG 1.072. FG 1.011. Higher than I expected, thoughts???

Anyway I run a 15.5gal stainless keg with 2” copper pipe 12” high reduced to 1/2” with a 3’ Liebig condenser.
Propane heat source. Striped 5 gallons tossed into the next 6 gallons and spirits ran it.
Turned out good, took about 10 hours at 2-3 drops a second.

Found this rainbow-ish film at the bottom of the riser when I was done.

Mash details, particularly mash in temp and what it settled to after mashing in? I'd guess your temps were a bit high. And/or did a mashout? But I'm not familiar with the yeast, I'd expect a whisky yeast to be rather attenuative, but maybe not?
