Sounds like you have a "hard" sorta millet. Mine gelled on water impact.
You mite want to lower PH a bit using lemon juice ...

I just started up a combo of barley malt & rye malt. 50:50. Took of like a rocket. With some 25% bacset of my all rye UJSSM. The malted grains seem to give a much faster ferment. The fermenter got really warm, actually.
Rye UJSSM by the way gives me a lot of taste. Especially the last gen. I took narrow cuts. And it gave me a great whiskey to drink white.
Curious whast the malted versions and combination of two grains that dó give me taste will do together.
yes its started bubbling now not very fast though generation 2 will probily do better. the bird barn has 3 types of millet availible in stock. -white millet- like jcrawf used -red millet- which i choose because it looked good, seeds are smaller than the white millet see photo below -hung millet- which was yellow and looked a bit dusty.
Stripped my genaration 1 red millet ujssm today. Lotsa differant flavours/smells as the stripping run progressed. Tastes really good looks like this grains a winner! I Give Millet UJSSM a double thumbsup
generation 2 came out almost neutral no traces of the nice nutty aromas so evident on the gen 1 stripping run, put down gen3 with 1kg red millet added to the grain bed that I ground up in the coffee grinder. gen3 tastes better but still nothing like generation 1.
Up to gen 5 now its now got no discernable flavour gonna do a final spirit run when this wash is ready. got to say started with high hopes for this grain but now dissapointed. Anyone reading this wondering if they should try millet ujssm. please do and post the results this grain has a lot of potentual and great flavours but I couldnt get this recipe right. It would probily do better in a mixed grain bill ujssm. and it needs more nutrients and stuff than i gave it..
My guess is that we just need to find the right sorta millet. There are many different varieties out there. Just as I couldn't find sweet/sugar corn over here and make an original UJSSM with enough taste, so it must be with this cereal. We should just start to eliminate the kinds we tried so far and try to progress from there. The claim that millet whiskey is the best one you can make, is too much to give up already.
I will call my supplier to ask him what kind off millet he actually sold me. If others do the same, at least we will know what not to use.
