I just took a lil road trip to shoot the shit with my only hobby distilling friend.
And as always we traided shots and ideas well he gave me a snort of his all grain millet wiskey.
Long story short it was f***ing amazing!
But here is the question, he said is grain bill was 75% millet and 25% rice...rice!?!?! Has any one else here
used rice in a whiskey before?

I've used rice in corn, rye and beer. I like it, it's pretty neutral, gelatinizes really fast and will sparge through a false bottom (except with corn...).

I'm a gin drinker by nature and for me to say a wiskey is "great" means a lot.
I have a ujssm on its 6th generation and think its alright but this millet idea has
got me by the balls now!

Also thanks for the reply heartcut, do u think the rice had much influence on the
flavor?

The distilled rice in wash has it's own, subtle (good) flavor. It's what makes American style lager lighter than traditional. Try some dry sake for an example.

Yep I've read that thread and it's on my list of things to do. I just wouldn't have thought about
adding rice to a wiskey, it's a winner and I think this is going to be my first all grain.
I wish there was a way to taste test each others spirits here cuz some times a description
of a good drink doesn't do it justice.

Did your friend malt the millet or use enzymes? That does sound tasty.

He uses ensimes, he used to malt his own barley but he doesn't any more. When I give this a go
I think I'll just malt the millet using the bucket method cuz I'm a frugal guy and it seems ez enough.
Hey HC do u by chance know how much other grain malted millet can convert? I've read all about malted
barley and corn but can't seem to find the same info for millet. Thanks in advance

It's supposed to be between sorgum and barley after 5 days germination.
