cooked whiskey finishing at 1.02
I let my cooked whiskey using 80% corn, 12% rye and 8 % barley malt run for 4 days and its down to 1.02 and i run it. It never seems to get below this limit. Should it get down to just about 1.001?

Try next time either more malt or add liquid enzymes. And do a premashing before cooking the corn.
1.000 or even lower is definetely possible. From 1.065 to 1.020 is only 5.9%. From 1.065 to 1.000 8.5%.

something about corn for me i cant get much lower than 1.01. i have learned that proper mash and proper aeration before pitching yeast has helped. but ill still get that one ferment that stalls at 1.02. just finished a rice with enzymes and hit .998. same water same mashing. only variable seems to be the grains. but im no expert.

naw, just a random thing with my ferment. i can do 5 buckets all will get below 1.01 but for some reason ill get one of the 5 stuck at 1.02ish. still havent figured out that variable. rice though... getting below 1.0 with very consistan results. ill keep at itHank Reardon wrote:Are there any solids in the sample?

Corn is a bitch, but it sure tastes good. How about your mashing temp? I have much better luck at 140f than 150f.
Distilling at 110f and 75 torr.

If yo have problems with corn only, perhaps you should try a longer and hotter gelatinizing or a finer mill.
