Picked up 100# Bobs Red Mill Cornmeal today

Cash & Carry, $13 per 25Lbs.
Now to get my other grains, planning on 50 Lbs oats and 25 Lbs Wheat.
Then make about 80 gallons mash.

Got my new digital thermometer coming from Amazon along with a big grout & mortar mixer.
I should be ready to start cooking in a few days!
I am using high & low temp enzymes.

Planning to use Wyeast 3787 Trappist Ale Yeast.
May just start up a beer at the same time, then I'll be sure to have enough yeast for more batches.
It takes a lot to fill a 15 gallon barrel!!

I kind of feel like about the same as when I switched from feed store molasses to Sugar Daddy's Panela for my rum.
This is a quality corn meal, so the only determining factor will be in how I use it.
Hopefully I'll prove worthy.

Hopefully in a year (or 3) I'll have some really nice Bourbon to drink.

Awesome, so I need to catch up right?
Figure I can do an 80 gallon batch 3 times and get enough to fill the 15 and maybe a bit left over for the small barrel so I can have it sooner.
Going to have to visit Cash & Carry more often for sure.

Local brew supply store carries Wyeast 3789 Trappist ale yeast.

A unique blend of Belgian Saccharomyces and Brettanomyces for emulating Trappist style beer from the Florenville region in Belgium.
Phenolics, mild fruitiness and complex spicy notes develop with increased fermentation temperatures. Subdued but classic Brett character.

Alc. Tolerance 12% ABV
Flocculation medium
Attenuation 75-80%
Temp. Range 68-85°F (20-30°C)

I'm not a fan of bretty drinks. In fact at the winery we do our best to minimize brett contamination, the rare brett barrel gets tossed.

I've used that yeast many times in Belgian strong ales (Trappist style). It is a big ester producer, especially if you ferment faster, ie - warmer trmperatures. The esters do reduce with conditioning time, however. When young, the beers have a noticeable "bubble gum" aroma and flavor.

I didn't notice predominante phenols however, even though the spec sheet says so. Perhaps they would have more phenols if you don't aggressively aerate (which I always do). The slower start with potentially longer lag times may produce those spicy phenols advertised. I simply didn't get them, nor care for them. But the esters are there, especially with a malt-rich recipe (targeting OG 1.075+).

The Trappist ale yeast is fantastic for that (monastery) style of beer. How it will finish through the still, I couldn't speculate. But it is definitely worth a try at it.

Who knows what will come through the still, we shall see though!

I picked up a 50 Lb bag of flaked white wheat at the home brewing store and finished grinding my 50 Lbs oats.
As soon as I get my new digital thermometer and my mortar mixer I'll be ready to start cooking.
I even filled up my propane tank.

thanks for the link. id have to up my rig from 5 gallons if i ordered 5 gallons of molly and 50 lbs of brown sugar to make some rum.....

I have been getting my 4 gallons of fancy grade A from my spot for $48, but this is great, too. Little more of a hike than just on my way home, but yay! And they have bulk raw sugar.

I brought the water up to boiling and turned off the heat.
Added 25Lb corn, stirred in.
Added 13 Lbs oats, stirred - getting thick, down to 195F
Added 12 Lbs wheat.
Seriously thick after all 50 Lbs grain in, turning with my mortar mixer.
Hit 190F added HT enzyme, got noticeably easier to stir, but still thick.
This is 25 gallons, next batch I will go slower with the corn, I have some lumps.
Waiting to get down to 150F now for the LT enzyme.

careful with that thermometer in there with the drill, i lost one in the mortor mixer once cuz it got sucked into the vortex lol :mrgreen: :crazy:

Im in the NE. yes someday a keg will be my best friend but condo living and my stove are all i have to work with at this time. starting with a 5 gallon pot was good to learn on and when i move up to a keg the transition should be easier. im actually in the process of finishing a 7 gallon boiler with a few plates and delph. i have to get back on it....
