I seem to have picked up a strange off taste in one of my last batches. There is a distinct astringency to it. I ran it through again along with some lefovers from previous runs and it appears to be much improved but still present. It's currently sitting on carbon. I'm hoping that a month of aging will get rid of most of it. Any suggestions on what could be causing the astringent taste?
As an aside, I've pulled the copper mesh out of the column and it is in pretty bad condition. Soaking it in the leftover wash appears to have helped a little. What else can I use to clean the copper? I'm concerned that this is what is causing the off taste.
Current setup.
- 50l bokakob inline. Brew went in at approximately 40% and came out at 88%

vinegar will help clean the copper. the mesh will wear out though, and will need to be replaced at some point.
