Just curious, how much smell is there from fermenting that many carboys at a time? I guess too, how much smell is there when your running the still?
I'm in a sub-division and the neigbours are quite close.
Can you notice a smell in the air 200ft or more from your house?

When you are actually fementing wine it does smell but I doubt you can smell it from very far off.

Those pic's are sweet.

It looks to me like some wine aging in carboys. Not in the ferment stage.

Yeah the wine ferments in 1000 pound batches in huge bins. It smells but not that bad and the smell is actually very nice (not the wife opinion). The wine in carboys are oaked, done and just bulk aging, last years batches. This years stuff is in the three barrels you see. Just got good news. I won Gold (cab) silver (chardoney) and bronze (zinfandel) in the national winemaking competition.

Its true just like pot is the gateway drug. Wine is the gateway alcohol and a bad batch led me to distilling. Didn't want to just dump it down the drain you know.....

Once I can figure out how to perfect my pot still which is giving me problems, who knows, maybe those barrels will be full of whiskey and rum.

Never had a bad smelling one yet. They don't really have a strong smell. A bit yeasty for the first 2-3 of days, and that is about it.

This hobby is costing me a whole lot less than my other hobby, sat tv. Programmers, STB's, dishes etc are pretty expensive.

Hook

I recant what I said before about the Tomato Paste wash!! I broke down the formula in Excel. I even went so far as to figure out the equivalents of dry yeast for fresh yeast! At any rate, I just had to test this formula. On Saturday morning, I started a batch, scaled down to use in my 12 L alembic still, so 10 L of wash. I'm not ready to christen my reflux still yet, LOL. I put a moving blanket on the floor, then a heating pad (on very low, measured the temp with laser thermometer) under the carboy my wash is in, then a cloth over the heating pad. Sunday morning I was up early, as usual. I walked into the pantry to see what, if anything was happening. I was shocked! The only air lock I own was going like crazy! I took it off to aerate the mixture, and then put it back on. But wow, holy crap! I honestly did not think it would work. I removed the heating pad this morning and moved the carboy to a nice warm spot. I just wanted to give it something to get started on. I figure if it ferments slower, at a cooler temperature after that, I should get more alcohol. I did not check the SG, and I still have not!! My bad. But wow! I’m still in awe! I have a feeling it will be used again until I become more proficient at this! Thanks Hook for the encouragement by humiliation, LOL. Thanks to everybody. I'll let you know how it turns out!
