Apple Brandy Help

I've got one apple tree with great fruit, but not enough to do a 10gal batch. If I wanted to add it to store bought apple juice is there a certain percentage of each I should use or just add to bring it up to 10gal when I finish the home grown fruit? I want to do this sugarless and it's my 1st brandy so I'm in unchartered waters here. Tip's and tricks welcome.

Put 'em together to make 10 gallons, add some EC-1118 and hang loose for a bit.

Pears are a great substitute, if you are buying apple juice make sure that it has no preservatives.

Not sure if you've seen it yet, but there is a good thread over on tried and true about mashing with fruits and berries written by tater. Lots of good info you can get from it. Last I saw it was on page 2.

Bushman, does frozen apple concentrate typically have preservatives? I don't see it on the label. 100% apple juice (only) listed.

Unfortunately, I did not spray my apple tree so I don't think the ripened harvest will be big enough, therefore, I'm picking them green (still tasty though), and freezing them so that they'll juice up when thawed, right off the tree they're quite hard still. Green apple brandy, I might be creating a whole new beverage??!!

why are you picking them if theyre green hard and not ripe??? Leave em be on the tree till theyre done or your yield is gonna be crappy from picking before the sugar content comes up. Buy a $20 refrac. Its a good investment. Theyre done when the brix is 15+ Apples dont need to be sprayed for brandy, a few worms is good yeast nutrient.

How'd this turn out for you, sltm1? I just scored some free apples (thanks to my mother) but not quite enough to do the ten gallons I wanted. I may just buy a bit more, or go the juice route. The ones I got though are perfect...saw one frost and fresh fallen off the tree, nice and sweet. Got my fingers crossed, mouth is watering for Apple brandy!
