I dont get it y'all. whats so great about brandy? my 1st brandy was 4 lbs peach, 3 lbs mixed berry, 4 lbs brown sugar to make 5 gallon wash (I know real brandy doesnt add sugar). tasted like mediceine mixed with sheep piss. diluted to 35% ran it again still tasted horrible. have it sittin on the shelf cut into 7 different jars each jar tastes like shit dont know what to do with it.
got 2 gal. good home pressed apple juice (pulp not filtered) from a mom/pop roadside produce vendor. stuff tasted like apple heaven b'fore i messed with it. boiled it with 1 lb brown sugar. cooled it. pitched it with 1 packet EC1118 2 weeks ago. racked it correctly twice. SG went from 1.078 down to .995 distilled it tonight with pot still. not as bad as last batch. but i still wouldnt be proud to give it to friends. even the middle cut... at 60% diluted it with more heavenly roadside apple juice down to 20%. still hard to get down. sharp tasting.
the peach batch i thought might be sharp cuz i didnt let the peaches get "real soft" before i froze them. thought maybe not being fully ripe might cause a real "pectin taste". but after this apple batch i dont know if i want to try any more brandy. just too dissappointing, and too much time invested. I'm pretty happy with my corn/rye/6 row barley whiskey results. but all this bad brandy I'm tempted to just mix it all together with some bicarb let it sit for a week and try to get some neutral spirit out of it.
