I have some cans of Welch's that I'm going to make into a brandy with.
Basic idea is 2 cans of concentrate plus a pound of sugar to a gallon of water and make wine. How long after fermentation ends should I wait before distilling it? a few days, after it clears, weeks, months? I've seen a lot of references to brandies which are processed as soon as fermentation is complete to references where you should wait a few months.
Also, should I go with Fleischmann's bakers yeast or a champagne yeast? Temps are ~75F in the house right now.
