Hi all,
I want to use palm dates as alternative to tomateos paste in a sugar wash. I am going to use 50 g dates( without stone) per liter of wash. My concern is that dates might have too much pectin which would might result in too much methanol. Will I get too much methanol from this recipe? Would it be better to boil the fruits or soak and mash them for less pectin?
