Red Star Dady Distillers Yeast
Just bought a pound, this stuff is great for distilling, Esp corn...Fast, aggressive yeast, can go to 22% with proper Nutrients. If you use, use a blow off hose also...

Re: Red Star Dady Distillers Yeast
But why would anyone want to push for such a high gravity wash anyway...??? Especially with grains... Think Quality, not Quantity... All grains are best in the 8% - 10% maximum potential ABV range... Sugar washes should stay at or below 14%... Anything higher is for rocket fuel...

+1 Rad
Damn near impossible to make a 22% AG anyway, or even 15%. Mash would be like breakfast oatmeal AFTER adding the malt/enzymes, and a block of cement before. 8% mash's are as about as thick as Id ever want to deal with.

In theory there's no difference between theory and practice. But in practice there is.

DADY ferments like crazy at higher temps and a 6% AG mash.
I haven't measured the mash OG, the 6% average is based on pot boiling temps.
And Rad's charts.

I dont go over 8-9%, the Mnf just states the yeast can go that high. Sugar Wash?

Re: Red Star Dady Distillers Yeast
Maybe it's just the batch I bought OR a relative newbie making some mistakes, but after a couple very successful sugar washes with (Still Spirits PURE) Turbo yeast, I used this with this yeast on a Wineo PO Sugar Wash and it has been very sluggish. It is still going after 18 days, got stuck and unstuck and slowly marching to a pot. ABV of 8.5%. I went through the whole list of top 10 (11) reasons for a stuck fermentation and I think PH Crash may have been a factor, but so far (may the Gods spare me) I liked the Turbo Yeast better. I will see this one through and give it another shot but I am not optimistic. The only thing I will do differently next time is be more diligent about the first few days and probably over-pitch the yeast and nutrients. ... or switch to makers' yeast. Thoughts?

Re: Red Star Dady Distillers Yeast
I've been solely using DADY for everything lately. 7-10 days is my norm to finish out for sugar washes (or Odin's rye bread recipe!!!), but I always use a small hop bag full of oyster shells from Tractor Supply after learning the hard way on pH crashes on the first batch that stalled.
I ferment in my dining room, which runs ~72F daytime, ~68F nighttime.
The All Bran wash I did a couple weeks ago was done in just 5 days, but I had to let it sit another 2 before I had the time to get to it!
Most everything I've read on the forums is that you'll get a better tasting end product with a "slower" ferment. My agave syrup wash took 3 weeks!!!
