Chlorophyll?

Post by Alchemist75 »

So it's stated in the Wikipedia entry for absinthe that chlorophyll has a similar affect on liquor that oak aging has other spirits. I occasionally add chlorophyll to some of my botanical liquors for color but I'm not clear that it's doing anything to mellow the spirit. The addition of distilled botanicals has a mild smoothing affect by themselves so it's hard to say.
Is it simply that macerating herbs in the finished product provides the tannins necessary to age liquor or does the chlorophyll itself actually have an effect? Any absinthe wizards or others have an educated opinion here?

Really, you add this? Chlorophyll should only be present when you steep with certain herbs after distillation (if going for the green look) and so would be present in almost trace amounts.

Yep, in small quantities, to give a light green color.
It's quite safe for human consumption even in very high concentration though using it undiluted will stain your mouth a lovely emerald in addition to one other humorous side affect....

Hee hee! Yup. Actually I joke around about getting the Christmas shits with my buddy: do chlorophyll for a few days and then do beets for a few days and repeat throughout the Xmas season. Festive!

Time ages liquor but the plant fats might actually act the same as glycerin and make seem smoother. Just a guess though
