Had a guy give me 15 two pound bags of imperial brand pure cane dark brown sugar.is this molassesy enough to make rum or do I need to add molasses also? Should I add nutrients? I am figuring on starting with the brown sugar and adding water to a sg.of 1.075 and single running it. Should I add a quart of molasses or tomato paste or anything for nutrients?

I usually use the dark brown sugar for my rum, but I do add more molasses, some vit. B, some Epsom salt, and also some tom. paste for nutrients. I guess it depends on how strong of a molasses flavor you want in your rum.
If you are not living on the "Edge", then you are taking up too much space!!!

I figure to add one qt blackstrap molasses and a can of tomato paste.all in a fifteen to twenty gallon wash.

The Hook rum recipe in the Tried and True recipes section gives an alternate version using brown sugar. That's pretty much the recipe I used for rum. Been a while, but I think I remember adding about a pint of molasses to about 4 gallons in a 5 gallon bucket. I think the recipe calls for DAP, but tomato paste is an acceptable substitute.

Dark brown sugar is basically processed cane sugar with about 6.5% molasses. Light brown sugar has about 3% molasses.

If your using some molasses, you don't need any other nutrients.

Just cook the sugar and molasses to 150F for a few minutes to break the sugar.

Nice score. Pure cane sugar is a bit pricey in my city, but still cheaper than buying rum, and I really like hookrum[gvid][/gvid]

So I put the wash down last nite about 8. I ended up using 24 lbs dark brown sugar 4 oz raisins boiled in two cups water and the water,a small can of tomato paste,and a pint of molasses. Added water to reach 1.080 sg. Gonna see what happens. ..it was fizzing on top earlier so it's working but I didn't check the sg. I'll post that's later.

Couldn't tell you, I've never fussed with mine after only 6 hours. I let it bubble then check when it slows or stops.

Also, did you temp correct for your reading(s)?

Sorry moosemilk that 1.060 was after 48 hours ferment time but 6hours before that post. It was taken at 11 pm last nite for the 1.060 and today at 4pm for the1.045 reading.I think its doing good,personally. I seem to have lost my temp correction chart.i use the standard. Brewhaus hydrometer and potentiometers calibrated at 60 deg f. You wouldn't happen to have a link handy to a temp correction chart would you? My fermenter is outside so the temp fluctuates between90 and 78 degrees. But the 1.060 was at 79deg f and the 1.045 temp was at 89deg f.

Yeast like as consistent of a temperature as they can be provided, regardless of the exact temperature as long as it is withing range... That in itself can hasten and improve ferments...

Just grabbed this one from online. If you Google you can find one depending on what yours is calibrated to. Not sure if parent site has converter, but most home brew sites do

Thanks moose that's exactly what I needed.
Rad,yes i know...ive went so far as burying my three trashcan fermenters in the ground so that only about four inches and the lid is aboveground. Probably only get a few more ferments before we hit a hundred degrees and stay there till mid September. Texas weather sucks...but this is a cool year. :D normally by this time of year its already a steady 104-105 degrees.

So my wash is down to a sg. Of 1.020. It smells awesome. Best smelling and tasting wash ever...
guys....i think I have successfully fermented rum!

Still at 1.020...is it done???
how dry will brown sugar rum ferment out to? It tastes mostly done to me. Not quite as dry tasting as ujssm gets. Barely has any sweet taste at all.
I'm thinking its the non fermentables throwing off the hydrometer.
tastes as dry as ujssm at sg 1.010.
. Any advice from the rum makers?
I may just run it Saturday night just to free up the fermenter.

Low and slow in a 15 gallon keg pot still.adding about a tablespoon of butter to the boiler in case of foaming.

I did a straight brown sugar wash and mine stopped at 1.030. Added some molasses and water back up to 1.080 and it went back down and stopped at 1.030 again. I'd say it's the unfermentables in the brown sugar.

there was plenty of brown. Sand looking stuff in the bottom of the fermented that didn't ferment for sure.
