Thank you for that SMY 8)

The taste descriptions are particularly interesting - Just as I find those "peaty" malts and the talk of "reflux" within the columns. The fact that Glenmorangie run 18' columns and most of the "Opposition" stop at 10'.

So they are getting reflux out of a pot still, and some are incorporating a purifier (reflux condenser??) to the pot??

The purifier is a small thumper with return line to the boiler.
Not only Ardbeg uses reflux. Here you can see pictures:

Some even use water cooled columns.

I can't believe that they consider 55 hours to be a long ferment. I mean, I understand why they do it. But that's gotta be some yeasty, partly sugary wash they're running.

I have found other numbers from Ardbeg. Length of fermentation is 66.5h or 96h (weekend). But yes, I also wonder always reading such numbers. They use much yeast and perhaps the fermentation is very warm because of the large fermenters.

And that's it. Almost none of the Scottish whisky makers use cooled fermenters. They simply can't ferment for a longer time.

Nevertheless, a FG number of a Malt Whisky distillery would be very interesting...
