Yesterday I had the delight of an afternooner... Amber Rum!

Skip Rock distillery in Snohomish WA released their new Belle Rose and Belle Rose Amber Rum yesterday.

Sugar Cane grown in LA on a relatives property.

I've tasted the distillate straight from the still and it was fantastic. Sampled a bit of the Rose before bottling and JUST had the opportunity to try the Amber on their release day.

I got bottle #15/Batch 1 to take home and a nice taster shot of rum to warm me up before heading to the Pumpkin Patch with the family. Wife made me go back after our pumpkin fun to get another bottle but they had closed.

They are having the classic car show today downtown Snoho.
We'll be off picking apples and funky punkins.
My Uncke Mo taught me how to make apple Jack when I was in 6th Grade.

2 year old wheat single malt. Good Lord is it good, down to 2 1/2 quarts. time to start scrimping on this and savoring every drop. Sweet and fruity, caramelly and smooth, warm biscuits slathered in butter. I gotta get off my ass and whip up another 50lb sack of this.
In theory there's no difference between theory and practice. But in practice there is.

Year old sweet feed been on oak. Was trying to wait till Christmas but didn't make it. Don't matter what I mix it with or if it goes down straight, it's just too good to give away.

I've been trying to focus on drinking neutrals so I can keep my hands off everything that's aging. For the past 3 days, as soon as I get out of work I make one of these in a pint mason jar.

2 oz Neutral (50% abv)
1 tsp Raw Cane Sugar
Juice of 1/2 lime (must be fresh)

mix until sugar is mostly dissolved
fill glass with large ice cubes
top with club soda & stir lightly (as to keep carbonation)

It's light and refreshing and you get to make 2 (don't want that other half of lime to go to waste).

Is this called anything?

Randy, thats called a Caipirinha (if you use rum) Got any mint growing? Muddle in some mint leaves and you got yourself a tasty Mohito there. I love em, drink em all summer

To be precise, a Caipirinha is made with cachaça, which is Brazillians take on rum, made with sugarcane juice, as we do with Sugar Daddys Panela. So our Panela rum really isint rum at all its cachaça. But all this is getting a little pedantic, so just continue to mix whatever you like up in a glass and life is good, whatever you want to call it.

Now that you mention it, I do have lots of mint growing. Usually I use it for julips, but today will be a mohito day.

66% corn 20% malted red wheat 14% oats lightly oaked 4 months old at 50% on three rocks. Super smooth no bite and warm when it hits bottoms.

Kinda like a cross between Cachaca and Rhum. The grassy cane notes are some what mitigated by the boil process. But prolly as close as one can get to Cachaca without fresh press cane.
I had access to some really good Cachaca for a while as my wife has a friend that was bringing back some really good (nicely rectified) barrel aged spirit back from Brazil.
My wife said it sort of reminded her of tequila,,,,,But all I taste is cane.

Muddled lime, simple syrup (or fresh press cane juice) with Cachaca is really delightful.
Trample the injured and hurdle the dead.

Sorry to hear that, Jed. I kept one too many heads end jars a few months ago with some whiskey. I keep going back to it to taste it, and I keep trying to tell myself I'm not tasting acetone. But it's all lies...

I'll definitely be there. Trying to decide on the dishes to bring.

Well, fores sound like heads, and heads linger. We'll see though. Can't wait. Almost a month. Took the cinnamon out of the pie, checked in on the whiskey. The whiskey has a smoke that has developed in the past month, we'll see what the next month brings. I think the char added smoke on this one.

Three fingers and three rocks of single malt wheat aged on toasted chard and soaked in blackberry wine before use. Swallowed tongue when it followed drink down the hole.

No tongue came back for more. Single malt stayed where it belongs.
Now drinking my last feints run. Its a mix of everything. Cereal sugar head, ujssm, all grain, a gallon of kahlua that didn't make the cut, brandy, and chocolate shredded wheat sugar head oaked for three months. Has a chocolate nose, grainy start, chocolate and coffee middle and a fruity brandy finish. I'm gonna call it Kitchen Sink Shine.

It started when somebody gave me enuf cereal for 30 gal ferment. Tried for a chocolate vodka style drink but even the hearts tasted like chocolate cardboard after three runs. Couldn't clean the flavour up enuf so I dumped it in the feints jug and ran it again.

Havin some of my first distilled rum.. can't believe this stuff, even the wife is amazed. No bad poison feeling (like store bought) and no hang over!! :crazy: My fav so far is to mix with Blue Sky vanilla cherry coke.. mmmmm :D

Dammit Jimbo...get outta my head....lol. Just posted in a thread on this. I think Cachaca is closer to the single run, panela rum that you made...but from what I read...gotta go deeper into tails.

Friend just gave me a good bottle, straight from Brazil. Planning some Caipirinha with it. Tonight, drinking my first, 4 month barrel aged, gumballhead.....close to perfection. Can't wait to crack open the actual bourbon sitting in the other barrel...but giving that until November :)....thanks for the recipes Jimbo.

White rum with a couple of ice cubes, made this in the summer and it hits the spot, going to need to restock for winter since I only have a few bottles of my own stuff left.

Sampled some white shine at my family reunion this weekend.
It might have come from south eastern Tennessee from an unknown shiner.
For the life of me, I can't figure out the technic or the grain bill.
Just a guess would be 30% corn, 30% barley, 30% wheat and 10% unknown. Rye or sorghum?
And I haven't a clue as to what part was malted or if enzymes were used. The shiner did an excellent job with the cuts.
My hat is off to the person who made it.
