Thats cool! If you culture the right flora and fauna in your facility you dont even need to cap the fermenters. Like Belgium for beer too, coolships they call them... Only there, the whole region is loaded with the right bugs. The fill these trays with wort and open the windows!

some corn/wheat/rye I bottled today
sat on a 3 inch French oak spiral for 6 weeks. would have left it longer but I was sampling to much and I figured I would get it bottled with less chance of drinking

on the left a single malt scotch 80%barley 20% peat smoked barley
used the oak from the corn/rye for the scotch. I don't think it there will be a lot of color that comes through but we will see. may add a small fresh piece depending on how things look

This is a little taste of a young pure corn likker. Made with 1:2 ratios of fresh ground sweet corn and field corn.
About 6 months on oak, then put in a jug for a bit, just to age a little.
I've had a couple snorts more than I should, but it's tasty.
Sippin' right at 100 proof or 50%.

Simple Lil' Pot Still, no temp guage, no carbon, no scrubbers, nuthin' fancy. Sometimes use a thumper, sometimes don't.

I'll follow suit bob. Spirit run on a 9 grain. Corn, oats, barley,spelt, rye,brown rice, golden flaxseed, red wheat malt and white wheat malt.

BigBob - you did a very nice job of removing the Spiced Rum label. I have done a few - needless to say there sometimes is a "shipwreck"... :shock:

Those plasticized labels on the everclear bottle peel right off in a snap. I scanned and resized it and printed it out on sticker paper to fit on this jar for my own white dog. Cleverly disguised as something you don't want to drink, if you aren't "in the know"...

The whiskey in this jar had been on the oak for about 2 days at the time of the picture. I thought it was really interesting the way the oak tannins had made such a well defined layer. Anybody else ever seen this before? It was a first for me

Yep all my jars with new oak look like that kinda till I shake the bejesus out of them.

yep, new white oak domino toasted and then charred. Went away once I shook it up, and has gotten uniformly darker since. Interesting stuff... I wonder how long it would stay like that. The domino has since sunk to the bottom, so probably not any longer than two weeks?

ive had jars get the layer at the top and once the oak dropped , created a layer at the bottom. with clear in the middle

My first thought was that perhaps yours sank and mine floated because of differences in the density of the spirit. But if both of our proof and tralle hydrometers are accurate, that could hardly be it. I jarred mine up at 110 proof, pretty damn close to yours.

Is that new charred oak or used oak? Mine is new.

Big bob that looks damn tastey. Here is one that will hopefully make it to S316. Its 70% malted corn,15% malted white wheat and 15% rye fermented with wild yeast and put on heavy char no toast at 65%.

In the bottom pic I have 4 Qts Apple Pie (the SOH loves it!), half a Qt apple brandy on oak and a gallon of neutral stripped waiting for a spirit run. Top pic is my first AG (80% corn 10% each malted barley and rye malt) airing out. Pics were taken a while ago now, the AG is on oak as well and both it and the brandy are ageing nicely.
