Water in ethanol

Hello all
Brand new to the forum and brand new to the distilling process. Grew sorghum this year, and am in the process of making a "charles 803".

My question is the 5 - 10 % water remaining after distillation, will that water "settle out"? for instance if you have gasoline with water in it, and you leave it alone ( meaning dont stir or shake) the water will settle to the bottem in a short period of time, a day or so. Will the same thing happen with the last few % of water in the ehtanol?

By the way what ever happened to the cent symbol on the keyboard?
