That sounds awsome!

I bet some tomatillos and black beans would be good in it too.

I am going to try this recipe, we do not use our crock-pot enough and I love every meal that comes out of it. My wife actually does several soup recipes with the crock-pot.

TATER'S SOUTHWESTERN CHICKEN SOUP
Ingredients:
3-5 lbs chicken (I used 5 chicken legs and thighs)
2 Bay leaves
1Tbs poultry season
1Tbs of seasoning salt
4 Tbs butter
1 Cup chopped white onions
1 Tbs garlic powder (I used fresh garlic)
2 (7 oz) cans chopped green chillies (I used 1-4 oz can. Thought might be spicy and wife would not eat it. They were not spicy)
2 cups or 1 (14.5 oz can) chopped tomatoes ( I picked up wrong can and it was 28 oz)
1 Tbs Oregano
1 Tbs parsley flakes
1/2 Tbs black pepper
1/2 Tbs celery salt (didn't have so used 2 sticks of celery)
1/2 Tbs cumin
1/2 Tbs Durkee brand Six pepper blend or cayenne pepper (I used cayenne)
4 chicken bullion cubs

Directions:
Place chicken in crock pot cover with water add 2 bay leaves 1 tbs poultry season and 1 tbs of seasoning salt. Cook till falls off bones.
Remove skin bones and save liquid.
In sauce pan melt 4 tbs butter and saute 1 cup chopped white onions and 1 tbs garlic powder or (3 or 4 thin sliced cloves) till clear. Add 2 (7 oz) cans chopped green chillies. 2 cups or 1 (14.5 oz can)chopped tomatoes. Simmer this 10 minutes add to crock pot.

Put chicken back in crock pot and add liquid back to cover. Add 1 tbs Oregano-1 tbs parsley flakes-1/2 tbs black pepper-1/2 tbs celery salt-1/2 tbs cumin-1/2 tbs Durkee brand Six pepper blend (or cayenne pepper to taste)4 chicken bullion cubes . Simmer 3 hrs or so.
Enjoy. -Some add sour cream grated cheese (I used sharp cheddar) and crushed tortilla chips to soup when eating. I like about any hard bread broken up in mine .
I doubled the tomatoes by accident. We couldn't wait till it was the thickness I was looking for so we started tasting it when it was thin. I cheated put some on stove and pushed as hard as I could in another pot. I was making it for super bowl tomorrow and now I won't have enough. I put a quart in a canning jar and sealed it for later. It is really good thin. I was thinking it was gonna be something that I could use scoops for but glad I didn't. It is good with out corn chips and cheese and sour cream, but with it all of that in it is completely different soup. Without the chips and cheese it is something you might put with a meal, flavorful and delicate . With the cheese and chips (with or without the sour cream) it is a meal. I thought that the crunch of the chips would make it better but when the chips gave up the crunch and became a little soggy I liked that even more. Very nice. Will make again. With the quart I canned I wont have enough for tomorrow but no one will be the wiser. I will bring the quart back out when snow is on the ground. It almost reminded me of a very flavorful chicken taco. Very nice. I will do it again.
