Eggplant

Most eggplant comes out very soft in texture. Simple fix. Cut your eggplant to realistic thickness, lay out on the counter top/cutting board. Sprinkle salt on all of them and watch it sweat out its water. Give a good 30 minutes and dab with a paper towel and then turn over. Salt again for 30 minutes and repeat and do whatever you want with. I myself bread it, bake and top with gravy(sauce) and a little cheese of your choice for the day. Along with pasta..

It's a chore to do but I start out same as you salting it, then dip in egg and coat with parmesan cheese & breadcrumbs ...then fry in olive oil ....
man that's some good eatin!

You guys is makin me HUNGRY! Never did the salt thing but make it the same otherwise. Defintiely gonna try this! Thanks

I like eggplant that is thinly cut and simply fry it. No other add on and dip it in a sauce, fish paste, vinegar or anything.
