Pork Belly slow cooked in milk

Pork belly with skin scored
Black pepper
Dried sage
Ground salt
Fennel seeds
Fresh Garlic
Olive oil
Milk
Roasting tray

Heat up a small pan and dry roast black pepper and Fennel seeds, put this onto a mortar with some salt and dried sage and grind it up, add a couple of cloves of fresh garlic and some olive oil and grind it all together, spread this mixture on the flesh side of the pork belly and marinade for a few hours, preferably overnight in the frigde, leave it uncovered so the skin dries out
Before roasting rub salt into the skin and a little olive oil

Roast in pre heated oven at 240c or 460f for 20-30 min until the skin blisters and crackles watch you don't burn it !

add enough milk to go half to two thirds of the way up the pork and turn the oven down to 160c or 320f and cook for one and a half hours if the milk evaporates a bit add some more in
Remove from pan and let it cool a little

Ha ha Bacon that aint smoked is dead pig. Yeah I might have to try this recipe as Aldies are selling pork belly cheap at the momen :thumbup: t
