Pan cooked Yellow Squash 4 servings

Post by Tater »

Take 4 med squash cut into 1/4 in slices .Dice up med size onion .Take 2 tbs bacon fat and cook diced onions till clear .Add squash and cook till starts to get soft.Add in 1 can drained fire roasted diced tomatoes with garlic and basil .Stir in 2 ts spoons salt 1/2 teaspoon black pepper 1 teaspoon sugar and 1 teaspoon dry basil cover and simmer till done around 15 20 minutes. Not only tastes great but helps to get rid of summer squash.Had this tonight with deer burger steak
I use a pot still.Sometimes with a thumper

Sounds real good Tater! Yellow squash was a summer staple when I was growing up in S. Cack. Mama would just season with salt and pepper, dredge in flour and pan fry it. Kinda miss it - nobody in my house will eat it. The old woman is Italian, so the younguns are half Italian and half redneck. They tend to lean more toward the Italian food. Hell, can't even get them to try poke sallet.

Just sayin',

No, could never bring myself to do that Croweater. The Basel would suck the redneck right out of it.

Now, my mother-in-law, God rest her soul, was a true old-school Italian cook. I spent many a Sunday dinner at my in-law's house before and after me and the old woman got married. She would do homemade ziti and tomato sauce with chunks of beef, pork and chicken thrown in. Made me fat and diabetic, but damned it was good.

Never needed to have a reason to eat yellow squash. Gonna try this one. Thanks.
Will eating basil get me thrown out of Texas?

Sounds real good.
Not to detract from the squash but anything paired with bacon/bacon fat is not to be denied.

I seriously doubt that you will be asked to leave Texas . What food have you ever found that a redneck that was hungry and had a (several) drink in his belly would pass up ? We've even eaten quische here .

Heck, the wife and I went to a sushi place last weekend and there was a couple bikers and 2 ol boys in bib overalls eating raw fish and wasabi. Listening to a guy complain about feed lot prices and then order Chirasi is an experience.
