I prepped an 8lb bone in butt yesterday after I mixed up a batch of Hook Rum.
Using a master something electric smoker.
I cover the pork with Dijon mustard. Salt pepper and garlic powder (not salt)
Top with a sprinkle of brown sugar and cayanne for heat if you like.
It smoked with Apple wood 10 hours at 250 along with some duck breast that was done in 4 hours.
Delicious.
Day before prep helps flavors get into the meat.
Good luck with your butt.
My Uncke Mo taught me how to make apple Jack when I was in 6th Grade.

Yes that guy is the alton brown of BBQ/grilling. Great place to learn the ropes and research equipment. Not unlike this site.

For pork rubs his Memphis dust is solid, It's just getting warm enough up here to start thinking about busting out the smokinator.

Warming a bit here. Did a Caribbean jerk 5 lb. pork loin on the Traeger couple of days ago. BANGIN' !!!! My best effort to date as they are easily overdone and dry.

Ribs on the BGE this week end.

I like to put a large beef brisket in my big green egg Hermit. Makes a nice BBQ!

Couldn't even begin to tell you what kinda rub I use. Usually a combo of 2-3 BBQ rubs, then about 20 other spices I toss in with it. It's the shizzle though!!!

Initially I do. Cook for most of the time on then open the top and let juices onto coals for additional flavoring.

Note to self - build a smoker.

Last time I did some ribs I just printed out a dry rub mix from the internet. Just googled and used the one that looked the best. Turned out real good.

S-cack if you have a weber kettle grill check out the smokinator. It's cheap (even cheaper if you are good with sheet metal and make your own) and works like a charm. I smoke in my 22.5" kettle all summer and it works great IMHO.

I did a search for it and found the Smokeinator 1000 on Amazon, but I don't have a Weber kettle. I do have an old gas grill that I plan to gut and use for a firebox, but will need to pick up something to use as a covered cooker and hitch the two together somehow. A ole boy my daughter works with just built his own smoker/cooker. I'll probably get with him and see how he went about it.

Thanks for the smokeinater idea though. Maybe someone else here can use it.

I build them out of old fridges. Add a fire box and I'm good to go for 5 or 6 years.
