Thai Shrimp

Post by Bushman »

What do you do with a freezer full of shrimp? LOOK FOR NEW WAYS TO PREPARE THEM! My wife made this last night and it's a winner.

Thai Shrimp

1 # shrimp, uncooked8 oz. light Italian salad dressing
2-3 T chunky peanut butter1 T soy sauce
1 T honey1 tsp ginger
½ tsp crushed red pepper
6 oz. angel hair pasta
1 T salad oil1 T sesame oil
1 carrot, shredded1 C chopped green onions
2 T chopped fresh cilantro

1. Mix shrimp, ½ C dressing marinade and put in refrigerator for 1 hour
2. In a small bowl, mix peanut butter, soy, honey, ginger, red pepper and remaining salad dressing. Whisk together and set aside.
3. Prepare pasta
4. In sauce pan, heat oils. Add cilantro, carrots, onions and shrimp (drain before adding) and cook for 3-5 minutes
5. Toss pasta with peanut butter mixture. Add shrimp mixture.

I haven't been lucky enough to have that problem yet in life... but if it ends up happening, this recipe sounds like a winner!

This post reminded me of the news reports after hurricane Katrina... seemingly everyone in the whole city of New Orleans had 200 lbs of shrimp in their freezers. What timing!
