easy bread

Post by jedneck »

2 cups warm water
1 cup milk
1 stick butter melted
2 tblspoons sugar
2 tablespoons yeast
Approx 7 cups flour
Mix water, milk, butter, sugar, and yeast and let set till foamy
Mix 2 cups flour into liquid stirring till smooth add remaining flour 1 cup at a time stirring till smooth each time. When too stiff to mix put on floured table and knead in flour as needed. Dough should tacky but not stick to your hands. Knead till smooth and elastic. Put in oiled bowl and let raise to dobble in size. Punch down and put in loaf pans or form into loafs. Let rise again till double size. Bake in moderate hot oven till done.
Also makes good pizza crust. For pizza crust I add a little garlic and oregano to the dough.

I'd guess 350-400. Not really sure I use an old wood fired cookstove.

I'd say 15-20 min for a standard loaf pan. It will sound hollow when tapped on. I cook like I run a still. I use the senses to tell when done. That makes it fun to give recipes.

Made a couple loafs today to take to a family get together. I added 4 packs of instant apple &Cinnamon oatmeal with the first flour. If there is any left it will make a damn fine French toast for breakfast.

If not, someone needs to send Canada an E-mail inquiry...

I'm going to give this recipe a shot. We have just started getting into baking our own bread at home, and I don't know why the heck it took us so long.

Thanks Jed. The house smells great.

I used a bread machine and cut the recipe in half.

so i made myself some bread for the first time. i loosly follwed jeds recipe and one i found in a magazine.

equal parts whole wheat flower, and gerneral purpose flour
about equal parts olive oil, milk , butter
salt and some cracked pepper
yeast
diced up some rosemary and thru that in

i then relized i have a bunch of milled grains. so i took a few handfuls of barley and mixed that in. i think that was the best move , it added texture and flavor to the fine flour . since i have some left over rye, red/white wheat/ and barly the options are endless. throwing the crushed grains in is a good way to use up that last little bit of grain in the bottom of the bag

damn good, might not buy bread from the store again. it might become a new hobby in its own.

you think there is a "bread makers anonymous" out there. i might need help , if not ill check in with you guys.

cheers

Us distillers and brewers are the only ones that got yeast. Stores are out. Made kiazer rolls for pulled pork with coleslaw tonight.
