Booner's cheesy herb bread

Makes a 1 1/2lb. loaf

Great sandwich or breakfast bread.

1/2 cup cold water
1 1/2 tablespoons olive or canola oil
1 1/2 tablespoons honey
2 tablespoons of chosen herbs. I use ruby basil, rosemary, oregano and lemon thyme from our herb garden. A little lavender adds a cool element although I use it rarely and typically if I am making the bread to complement a certain meal. They all go in fresh and finely chopped. Heavier on the basil and rosemary. Total is merely a suggestion but I am always in that ballpark when all combined.
1/2 cup low fat cottage cheese
1 1/2 ounces sharp cheddar finely shredded
1 large egg
2 1/4 cups unbleached all purpose flour
3/4 cup whole wheat flour
2 tablespoons powdered milk
1 1/2 teaspoons fine sea salt
2 teaspoons yeast

If using a bread maker add in order shown if you go in wet first. If not flip it.
Enjoy.

I use my Smoke yeast which is a bastard child of DADY.

That sounds good Shed, I've been using some of my homebrew beers in place of the water, makes a tasty loaf of bread.

I am making two loaves today for a party we are going to tonight. Adding sunflower seeds to one of them.
The seeds are from the flower garden at my wife's shop.

Well I cant say it was a roaring success but I take the blame for that, I've never really been able to pull off a nice bread, for cinnamonbuns I'm your man, but some some reason bread has always eluded me
