I will give it a shot Frodo. I have an excellent recipe. The biggest thing I have found is cook time.. The big difference in a good cheese cake and a bad one or average one is cook time. An under cooked cheesecake is better than an over cooked one.

If you have sjlivovice, try combining it with chocolate, almond oil, molassess, a dash of coffee, vanilla and a small touch of anisette, then integrating these flavors into the cheesecake.
The still is not a liar. Mash and ferment quality is 99.9% of your performance.

Looks like an excellent recipe. I have a recipe for Mitch style cheese cake that is similar, particularly in process. The long cool down period is meant to prevent cracks from forming.

After the cheese cake has cooled, do you remove it from the pan or leave it in the pan?

Yup, I use a spring form pan too. I have a tip for you. when it comes to slicing the cheese cake it can be a little messy. I cut it with dental floss, yup, dental floss. I can get 32 perfectly cut slices of cheese cake and they aren't small when you consider that the cheese cake is 10" in diameter. I like to pre-slice the whole cake so I don't have to worry about lots of people messing it all up. My wife and I frequently entertain, and there is always someone who decides he's gonna slice himself a giant sized piece only to leave most of it un-eaten.

I am planning on doing exactly that. I just need an evening I can devote to the task. Perhaps this Sunday.
