Bourbon BBQ Sauce

Bourbon BBQ Sauce

2 tablespoons vegetable oil
¼ cup minced fresh onion
1½ cups water
½ cup tomato paste
½ cup apple cider vinegar
½ cup brown sugar
2 tablespoons honey (orange blossom is best)
1 tablespoon Worcestershire sauce
1 ¾ teaspoon salt
1 teaspoon liquid mesquite smoke
½ cup bourbon
¼ teaspoon coarse ground black pepper
⅛ teaspoon garlic powder
⅛ teaspoon paprika

Heat the oil in a medium saucepan over medium/high heat. Sauté the onions for 5 minutes or until they start to brown. Add the remaining ingredients and bring mixture to a boil then reduce heat and simmer for 1¼ hours, uncovered, or until sauce thickens. For an added goodness, replace the water with a bottle of cream ale...
