Pork stew

Took a 2lb pork roast, covered it in flour, salt and pepper. Browned it in a little oil in a stock pot, in the pot I added stewed and crushed tomatoes, oregano, thyme, basil, garlic salt and pepper. Added water to cover, simmered it for 3 hours, added water as needed. Before it was done I quartered and boiled some red potatoes and blanched and peeled some pearl onions. When the roast was done I shredded it and added in the potatoes and onions. I let the potatoes and onions rest in the hot stew for about 1/2 hour. Served it with buttered bread. Man, simple food, but delicious, the kids and wife all had multiple bowls.

Sounds yummy but can I substitute the pork roast for tofu because Im mostly vegetarian. I only meat once maybe twice a month.

Im sure with tofu it would pick up all the flavors of the spices and veggies, so I say try it out.
