Smoked Baked Beans

This little item will knock the socks off the guests at your next BBQ. Sorry, all quantities are approximate as I do everything by "feel" and honestly it would be hard to mess this up. Feel free to modify as you please as it is a fairly flexible dish.

5 cans of Bush's baked beans (I use these as a time saver)
1lb bacon
1 large mango
1 large red onion
sliced jalapenos
1 small can chipotle peppers
1 small can diced green chilis
dry mustard
brown sugar
cayenne pepper (ground)
Ketchup (Catsup)
Molasses


Empty the beans in a large vessel that can go in your smoker
Cut the bacon into roughly 2 inch chunks and fry until it just starts to crisp - toss in with the beans and if you so desire (I do) drizzle in some bacon of the bacon grease.
Cut the onion into smallish chunks, but not quite to what would be considered "dicing" - Add to the beans
Toss in the sliced Jalapenos, whatever you're comfortable with is fine, as well as the green chilis and 2-3 of the chipotle peppers, loosely chopped.
Cut up the Mango into largish chunks and toss in the beans
Stir the whole mess up until it is fairly mixed together.

For the spices part, i usually just give the entire surface area of the mix a light (or heavy) dusting of the cayenne and brown sugar. Usually light on cayenne and heavy with the sugar. Toss a couple of table spoons of the mustard on as well.
drizzle the molasses on in a "S" pattern
add a cup or so of the Ketchup.

Mix it all up again and toss in the smoker at around 200-225. Temp isn't too important so pick the temp your unit smokes the best at. I like to use Hickory for mine, but Mesquite gives it a good southwestern flair and I think brings out the flavors of the peppers a little more.

Give it a good stir every 15-20 minutes to start, at least 3 or 4 stirs, and then let it go for 30-40 between stirs.

Once the onions turn clear and soften, it's done.

Ask BigBob if he has tasted something similar . Or Jed , or Randy Marsh ........................... Fixed that way them beans will eat right where you put them .
