Smoked Oysters
I love our fractional ownership on the canal you can't walk on the beach without stepping on oysters. Just cooked these in the shell in the oven to open then cold smoked with a rub made from spices we had in our condo box. Think I nailed it but I am on my second rum drink so don't ask too many questions.

I'm a big fan of fresh oysters, I grew up eating them on the north Oregon coast.
Smoked is just a whole step above!

You're lucky to have them under foot. The closest I get to smoked is canned from the grocery store and they're just not right.
Just like raw oysters, I like the smoked with just a dab into a hot sauce and with a beer.

Don't see how you could improve on that You entertaining visitors from the east ?

That is why I like buying a Canadian license even though it costs me more your seasons are much better than ours for both fishing and catching shellfish.

It's become very difficult to clam and oyster-fish on Vancouver Island. Almost all the beaches have been licensed out to private aquaculture and there are few, if any places for the public to go now that haven't been raided by people who can't seem to obey harvesting rules.
The still is not a liar. Mash and ferment quality is 99.9% of your performance.

I've been wanting to do this with mussels! Since that's what I have readily available, and then can them in some oil...with peppers.
