Mango-Agave Brandy

3 -Partida 100% Blue Agave Nectar- 23 oz. each
2 - Large Cans of Pears in heavy syrup
1 - Carton Juicy Juice Apple-Peach juice - 64oz.
4 - Cartons Jumex Mango Nectar - 64 oz. each
3 - Tbs. DADY
10 - Cups Pure Cane Sugar
Water to equal 5 Gallons

1. Mash pears to break down into small bits.
2. Combine first 4 ingredients in large stock pot and warm up to 120-140' F.
3. Add sugar to pot and stir until dissolved.
4. While mixture is cooling, mix yeast and equal amount of sugar in glass with a couple of ounces of warm water ( around 90' F.) And let sit 30 minutes or so.
5. Dump juice mix into sanitized fermenter and add water to equal 5 Gallons.
6. When mixture has cooled to around 90'F. , add yeast/ water/ sugar and stir thoroughly.
7. Let ferment until dry. Rack it off and distill in pot still for full flavor!
The angels and the Devil should get their own still. I'm getting tired of giving them their cuts!
