WELL, I've been pretty lazy on the likker front.
I have some cuts to blend, and I've got 10 gals of ujsm to run.... Then I should be caught up.... and then I'll need to get busy brewing!
Everything I do or say may or may not have really happened... or it may or may not be all bull shit!
Turning money into steam and likker 10 gallons at a time!
I just want Uncle Sam to be more like Uncle Jessy!

I can't wait to start brewing... Probably do my first ag beer next weekend. I may do a hefe weisse, not sure yet. Are hefe weisses a bad starting beer?

Certainly NOT!
Just be prepared for a slow sparge if you're using wheat.
If you've not gotten your grains yet, get a handful of rice hulls for your grist. They will significantly help loosen the glue that you'll make and keep you from getting a stuck sparge.

Today I'm making that hefe that I was talking about a few posts up... I took Rum's suggestion and grabbed some rice hulls as well. All very exciting.

Gurrr! Just spent 4 hours super cleaning the kitchen (Between last night and this am.)
Now I want to run the still... but not sure if I want to make a mess in the kitchen again!

For whiskey... I do like this CM still with a 3/4 packed column. It pumps out at 75-80% for the whole run and plenty of flavor too.
It took some time to get it all dialed in, but that's half the fun right????

I'm pretty much down to single runs unless something funky comes through.
When I get things right, man they are good! When I screw it up somehow.... I end up re-running... or just adding back to the next run.

Oh... and I lied. This batch is running off at about 89% -91% right now.

Woah Balls!
Even the tails are coming through at 87%!

Most of this run was at 74 degrees and 90-91%, then the temp started climbing over 600 ml of distillate. Now at 84% and 84 degrees!

Tell me again why I need to build a boka? I need something to STRIP with at this point!
