Nir, I'm no professional but I am a thinker...
One of the first things I'd do is research the Torah and Holy Bible for justification of alcohol in the Holy Land. It's there, look it up. Pick out some of the more favorable/easily quotable verses and have signs made with the quotes on them. These should be posted throughout the distillery.
The purpose would be that you are sure to meet some resistance from your distilling endeavor, yet, with the quotes easily at hand, memorized by seeing them daily, the word is impossible to defeat...
