For distilleries who have been making the same product over and over for years it is the appropriate term to use and that is probably where it came from, but I reckon it's the wrong word to use when you are just starting out and don't know where to cut on the fly, or fancy yourself as an artisan trying to make better products than the industrials.
I cut on the fly for very few products I make, mostly making up blends from from the jars I've collected. On my last run I did cuts on the fly, but that's an exception because I've been doing brandy from my own grapes annually for twenty years, but for many products I vary the proportions from each jar to make more than one blend from the same run. E.g. Corn likker, I'll do a blend to be drunk as young white dog and a blend for long term aging.
