I've seen that chart, and it's pretty consistent with others Ive seen. Im using it as a basis for the time frame for my 5 gallon (20l) single malt as well. I have a once used bourbon barrel I'll be filling with a mash blend of 50/50 Cargill 2 row and Maris Otter.
Use all your senses, and its not that hard. You just have to pay attention.
