What happens when you drop in on Jedneck for a day? You make whiskey, of course! In fact, today we are mashing, cooking, and blending all in one day! :clap:

How to make bourbon:

Start with a solid fermenter

Just make sure you pay attention when filling the boiler.
Grain bill is
50# # corn
12.5# red wheat
25# rye malt (thanks shineoncrazydimond, very generous of you.)
High temp enzymes to ensure conversion.

He also bought a few home brews. Mighty fine beer. Nice an malty with just enuf hops.

Here's the blending to do. Its malted corn,rye and wheat. Ran couple or 4 months ago.

The cooking /mashing/fermenting barrel is the one I dug out of a friends barn. It is water tight enuf that the goo is gonna plug the last leak or two. Barrel was in the barn for 25+ years near as friend can remember.

Add flour paste (which makes you decide to put wheat flour into the grain bill. .. :lolno: )

Steam wand is just my 4ft leibig for this cook. My normal steam wand wasn't long enuf to reach the bottom.

Here is my normal wand. Its just 3/4 and has holes drilled on the bottom every inch.

Real men don't need no stinken gloves. Added a good dose of enzymes to keep it from gettin thick.

I usually start cooking at 3#/ gallon and end up around 2 1/2 #/gallon. So yea it does add volume.

We gotta eat also. Little bit o venison sausage, kale, beet greens, garlic scapes, taters, basil,sage, onions and real butter all fried in one big o skillet. All washed down with one of shines great brews.

Malt is in 25# of rye malt. Lost a quart of mash to my belly. Damn Bourbon mashes are tastey. Gonna let it sit overnite and pitch yeast (bakers)in the am. Would you believe that this is the first time I used commercial malt. Always malted my own.

Added dose of second enzyme and tucked into bed. Will cool and pitch in the morning.

Yeast is in and its tucked in for a good ferment hopefully.
Shine thanks again for the sack o rye malt. Sucks that the weather wasn't the greatest I was lookin forward to cooking on wood, maybe next time.

Rager you are welcome any time. If my math was right there should be around 4.5 gallons to 100% happy in the barrel if it goes to 1.000. Got the groceries for another ferment then I'll do a spirit run. 175# of grain should give me a nice little stock pile.

You take care of that ferment now. Looks good, and I'm looking forward to trying our hard work. You're more than welcome for the malt. It was the least I could do in the journey to a good drop! Thanks for the eggs! Stopped and got some smoked garlic bacon from a spot on the way home. Going to make a fine bacon and eggs sandwich for dinner!

Oh!, I have to go try my jar from Jedfest to see if there are cherries there, too! :wave:

Opti-mash and ulti-ferm. I believe the malt would have been enuf but I have the enzymes so what the hell.

Ferment went to .999999999 or 8.3%. It was 1.01 in 36 hours and 1.005 in 60 hours. Got half stripped last nite. Got near 5 gallons of lowwines at a little higher proof than what I normally stop at. I pushed my rig to the fill limit and was starting to get signs of eminent puking. With output measuring 20% I shut er down. Normally I go till collected volume is 25-30%. Gonna try and get the rest ran tonite.
57% corn
14%wheat
29% rye malt
Here is the bill. I believe I found a new fav. And its showing potential for a white sipper. But most will be oaked.

Got another shiner weekend in! Although this time we were cooking beer. Can't live on whiskey alone. Sometimes you need a cold brew to drink with it!

Panickry came over today and helped put together Christmas in Jul-IPA. It Is an imperial ipa with a load of citrus and tangerine explosion hops. And of course, fresh spruce tips (thus, the Christmas part!). Thanks MCH for the inspiration! The initial sweet wort didn't have that much pine in it, so, hope it comes through. Tasted nice, anyways.

All tucked away, with a half gallon starter of British ale malt.

Unfortunately due to family issues I had to give the fish a drink. Hope they like Bourbon mash. Also dumped the allbrann ferment. But I got 5 gallons of lowwines stashed for after it cools down.

Thank you guys so much for sharing this great time you had. I just found the thread and was hanging on every word. We are in the process of moving. I have just negotiated the largest and best deal of my life (seriously, I can't believe I pulled it off.) Now comes the task of moving, getting a new job, and restructuring our lives. I should have a little extra time at first until we can afford to really turn the new place into a ranch. Then I'll likely have even less time. I miss spending the hours quietly cooking and distilling my own product. Even as its been stressful doing it in the city it is still somehow serene. I'd give my left nut to have been there with you guys. Once again thank you for sharing. It meant a lot to me and likely to many others unable to participate because of their situations.
