Things have been hopping in the Portland area with regard to micro-distilleries as I recall... Plenty of information here as you have discovered...

Yeah, Portland is hopping with breweries, distilleries etc.. so much so that there are a lot of us that will try our own hands at the stuff. To quote an employee of a brew supply store here in town " The hills a be hissin'".

Yes things are very exciting here in portland we even have community college give classes about distilling! and I'll be taking it!! :D

there is a distilling class in March I believe Big Bend Community College in Moses Lake, Washington. Not too horribly far from Portland . . . It's been rescheduled a couple times, but I think the date is firm now. Here's a URL if anyone is interested:

I looked it up. It looks like it is primarily going to teach you how to make absinthe in conjunction with a mandatory legality class.
It is run out of a business I am not familiar with here in town, I'll have to look into it further. There is a section where you can submit
questions, you might look into it. The class is run through the P.C.C. (Portland Community College) system.
