All grain brewer here.
Looking to make a Booner Casual Corn mash @ 1.8lbs/gallon. I'm unsure how much corn/water mixture will fit in my 10 gallon home depot beverage cooler mash tun. Anyone know? I'd rather not guess and check.

16 pounds of grain & 7 gallons water make it up to the 8 Gallon mark on on my 10G cooler. Works great.

I've used these calculators with good results over the years. Specifically the "can you mash it" calculator. Give it your mash water volume and grain weight and it tells you the volume you need.

This did not go well.
I closely followed Booner's All Corn, with the exception of adding Amylase at 155* and Glucosmase at 130* (generic enzymes).
I filled my 10G mash tun with corn/water mixture and let it sit overnight with the enzymes. I ended up with about 4G of 1.030 wort. It was a pain in the ass to try to drain the mashtun through the metal mesh tube.
Even if I fermented on the grain, I didnt get acceptable extraction/conversion.

Did you use sebstar HTL first @ 185 degrees?

How thick did it get before you added the alpha enzyme? If it didn't turn in to an unmanageable mess then you likely did not get good gelatinization.
