I am in the middle of making moonshine (for the very first time)
my whiskey mash has about finished its fermenting cycle
A family emergency necessitates that I leave home for 7 to 10 days
Am I OK to leave the mash in the fermentation carboy for a few extra days as long as it remains sealed? Thanks all.

Yes it's fine. Closed and undisturbed it'll last months if not longer.

It should be fine if it has an airlock on it. It will build up a CO2 layer that will protect it.

A friend of mine was making hard cider and forgot it in a car boy for a year. It looked bad and he was going to throw it out, I said let me distill it and see what happens. Turned out great!
