So I'm going to be creating a rose wine wash for distillation.
Most of my sugar washes I use turbo 100 which ferments to 18% in 48 hours. I then collect 40% at 78% abv as hearts and after a single carbon filter it's more than perfect for creating my gins. I know turbo is frowned upon on here but it works for my purpose.
I'm assuming with the wine wash I won't really be able to use a turbo as I think it would lose the flavours. Plus, I don't think I'll be able to carbon filter will I? Because I'll lose the wine flavours.
Ideally I don't want it fermenting for more than 2 weeks and a week would be better.
Can you advise me on what yeast and proportions I should use for the rose wine wash? Along with approximate fermentation time using x yeast?
Also how high of a percent can I reach with the rose wine wash while still preserving the wine flavours and not needing to carbon filter?
After distillation I want a nice clean spirit from the wine that won't require carbon filtering. I assume my cuts will have to be less than 40%?
Best yeast for fast fermenting a wine wash?
