Absente is a pastis, sold in the U.S. and Europe at 110 proof (55% ABV). Absente markets itself as "absinthe refined," but in fact, it cannot properly be classified as an absinthe, because it does not contain wormwood (A. absinthium). Instead, it is made with southernwood (A. abrotanum), a distant cousin of wormwood that contains no thujone, making Absente legal according to FDA regulations. Among serious absinthe drinkers, Absente is considered a cheap substitute, at best.
