I recently made a very nice run using malt extract and Cooper's yeast from OZ. I thought it was a very fine ale yeast. The wash tasted excellent for a beer with no hops. No problem. I just know several homebrewers that swear by calcium chloride even when mashing good wholesome barley. HBD has lots of articles promoting CaCl for mashing.

What size would you say the doubler section is? It is more a function of depth rather than volume. White polished rice is a bit strange to convert using enzymes. If you are using that store bought mixture to convert rice, it will not convert well because of the lack of calcium for the catalyst and chlorine for activation. A very small pinch of calcium chloride will fix that.

It's not a secret any more it is called richoderma reesei TISTR 3080 which produce cellulase for conversion of cellulose into sugar. It is readily available from most bio culture suppliers.
